Taco Soup
1 1/2 lb. ground beef
1/2 C chopped onion
1 – 28 oz can diced tomatoes and juice
1 – 14 oz. can kidney beans (any color) and juice
1 – 17 oz can corn with juice
1 -8 oz can tomato sauce
1 pkg. taco seasoning
1-2 C water (depending on desired consistency)
salt and pepper to taste
Optional Toppings: cilantro, sour cream, crushed Doritos or other nacho chips, grated cheese (cheddar, Taco mix, Monterrey Jack…)
Brown beef and onions; drain. Add remaining ingredients and simmer for 15 minutes. Ladle into bowls and top with any/all of the optional toppings. Enjoy!
